Gingerbread cookies

about 30 cookies


5.2 oz almond flour
2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ground ginger
1 tsp vanilla powder
0.4 cup chopped almonds
1 tbsp chopped pistachios
1 egg
1.4 oz coconut oil
2 tbsp Agave syrup


Mix all the dry ingredients in a large bowl.
Add all the wet ingredients and mix well until the dough is smooth.
Shape the dough into a roll and put it in the fridge for 1 hour.
Cut the dough in slices and place them on a baking sheet with baking paper.
Bake in the oven for 10 minutes on 356 Fahrenheit (180 celcius).
Let cool on a rack.
