Beetroot Burger

2.6 oz cooked quinoa
3.5 oz beetroot
1/2 onion
1 clove garlic
1 egg
1.7 oz feta cheese
1 tablespoon oliveoil
salt 
Pepper

1/2 avocado in slices
5 slices cucumber
2 slices onion
1 handful spinach
2 teaspoon mayonnaise

Burgerbuns:

3.5 oz riceflour
1.7 oz chickpea flour
1.7 oz buckwheat flour
2.1 oz sesame seeds
salt
1 teaspoon dry yeast
2 tablespoons psyllium (flea seeds)
1.8 cups water

 Instructions:

Start to make the buns.
Mix all the dry ingredients together in a large bowl, stir in the water and mix well.
Let rise for 5 minutes. 
Make 8 buns with a spoon and lay them on baking paper on a baking tray.
Let rise for another 15 minutes.
Heat the oven on 392 Fahrenheit (200 Celcius).
Bake the buns for 35 minutes.

Make the beetroot beef.
Grate the beetroot, onion and garlic and add it to a large bowl.
Add cooked quinoa, egg, feta, salt and pepper and mix well.
Set aside for 15 minutes.
squeeze most of the moisture out and form a beef.
fry the beef in a pan with olive oil.

Split the burger bun and spread with mayonnaise, then add spinach, beetroot beef, cucumber, onion and avocado.

Serve with carrot fries.
