Lentil Dhal

1 serving

1 tablespoon olive oil
3/4 onion
1 clove garlic
0.3 inch ginger
1/2 bell pepper
2 carrots
1 teaspoon curry
1 teaspoon turmeric
1 teaspoon ground cumin
1/2 teaspoon chilipowder
1 tablespoon peanutbutter
0.4 cup red lentils
1/2 can chopped tomatoes
1/2 can coconut milk
Juice of 3/4 lime


1 tablespoon hemp seeds
fresh thyme
1 tablespoon peanuts


Chop onion, garlic and ginger.
Cut bell pepper and carrots in slices.
Heat the olive oil in a saucepan, add all the vegetables, sauté for 2 minutes, then add the spices and peanutbutter and sauté for another 2 minutes.
Add lentils and tomatoes, cook for 10 minutes, then add the coconut milk and cook for another 20 minutes. 
Taste with limejuice and salt.
Top with hemp seeds, thyme, peanuts and spinach.
