Beet Salad

1 beet root
1 tablespoon olive oil
salt
thyme
2 handfuls mixed salad
1/4 cucumber
2 tablespoons Feta cheese in dices
1/2 teaspoon mustard
1 teaspoon oliveoil
1 teaspoon red balsamico
salt
pepper

Instructions:

peel and cut the beet root in dices, put them in a freezer bag with oliveoil, salt and thyme and shake well.
Put them on a baking sheet and bake in the oven for 30 minutes on 392 Fahrenheit (200 Celcius).
Add salad, cucumber in dices, feta cheese and the cooled beet root dices into a bowl.
Make a dressing of mustard, oliveoil, balsamico, salt and pepper. 
Pour the dressing over the salad and serve.
