Baked Salmon Omelet

2 servings

3 eggs
3.5 oz cottage cheese
1 1/2 tablespoon Almond flour
1/2 teaspoon salt
1 tablespoon olive oil for the dish


1 Baked or cooked salmon
8 radishes
1/4 cucumber
1/4 cauliflower
1 spring onion
1 tablespoon chives


In a bowl, add egg, cottage cheese, almond flour, salt and pepper. Mix well.
Grease a dish with olive oil.
Pour the eggs into the dish and top with, salmon in dices, radishes in slices, cucumber in dices, cauliflower in small pieces, spring onion in slices and cutted chives. Bake in the oven for 35 minutes on 356 Fahrenheit (180 celcius).
Serve with a good wholemeal bread.
