Thai Chicken Soup

1 chicken breast
0.3 inches ginger
1/2 onion
1 clove garlic
1/4 red bell pepper
2 teaspoon curry
1 teaspoon turmeric
1/2 teaspoon lemongrass powder
1/2 teaspoon ground cilantro
1 teaspoon coconutoil
1/4 broccoli
0.8 cup water
1/2 dice vegetable broth
0.4 cup cream
1 tablespoon limejuice
salt
pepper

Topping:

Cauliflower rice
Parsley

Instructions:

Cut chicken, ginger, onion, garlic and bell pepper in small dices.
In a saucepan add coconutoil, curry, turmeric, lemongrass and cilantro, let heat.
Add chicken, ginger, onion, garlic and bell pepper. Let it fry for 3 minutes.
Add broccoli in small pieces, water and broth.
Let cook for 10 minutes, add the cream and cook for another 10 minutes.
Taste the soup with limejuice, salt and pepper.
Top the soup with cauliflower rice and parsley.
