Sweet Potato Roast

1 small sweet potato
1/2 zucchini
1 clove garlic
1 teaspoon lemon zest
2 eggs
8 tablespoons chickpea flour
salt
pepper
Olive oil for frying

Topping:

2 handfuls spinach
1/2 cucumber
1 avocado
2 tablespoons Feta cheese
12 olives

Instructions:

Grate sweet potato, zucchini, garlic and lemon zest, add it into a large bowl.
Add egg, salt, pepper and chickpea flour.
Mix it all together and fry 2 roasts on a frying pan like pancakes.
Top with spinach, cucumber, avocado, feta cheese and olives.
