Christmas Cookies

20 Cookies

2.6 ounces butter
4.4 ounces brown sugar
1 egg
a little piece fresh ginger (grated)
1 teaspoon cocoa powder
1 teaspoon cinnamon
1/2 teaspoon ground clove
1/2 teaspoon ground cardamom
3/4 teaspoon ground black pepper
1 little pinch of salt
1 teaspoon baking powder
1/2 teaspoon baking soda
7.9 ounces buckwheat flour


In a large bowl, mix butter, brown sugar and ginger together with a mixer.
In another bowl, mix all the dry ingredients and add it to the dough.
Knead the dough until smooth.
Put the dough in the refrigerator for about 45 minutes.
Roll out the dough between to baking papers, cut out the dough with a drinking glass. Roll out the dough once again and repeat until there's no dough left.
Lay the cookies on 2 baking sheets with baking paper and bake in the oven on 347 fahrenheit (175 celcius) for about 15 minutes.
Let cool and decorate with glaze made of powdered sugar and water.
