Quinoa Stuffed Sweet Potato

1 serving

1 small sweet potato
olive oil
himalayan salt
0.2 cup black quinoa
1 clove of garlic
1 spring onion
1/2 red bell pepper
1/2 handful parsley
1/2 handful shredded cheese


Bring the quinoa to a boil.
Heat the oven to 392 fahrenheit (200 celcius).
Rinse the sweet potato and cut a cross in the middle. Put it on a baking sheet and pour oliveoil and salt on the potato. Bake in the oven for 45 minutes.
Cut all the vegetables in small pieces.
In a bowl add quinoa, garlic, spring onions, bell pepper and parsley and mix it together.
Take the potato out of the oven and put the quinoa stuffing in the cross of the potato, top with cheese. Put the potato back in the oven for 10 minutes.

If there are any leftovers of the Quinoa stuffing, then you can use it for a Quinoa salad for lunch the next day.
Just add edamame beans, cucumber, avocado and a dressing of olive oil, applecider vinegar and seasalt.
