Blueberry Cookies

8 cookies

7 ounces wholemeal spelled flour
1.4 ounce cane sugar
a little sprinkle of Himalayan salt
3.5 ounce Coconut oil
1 egg
1.7 ounce Blueberries


In a large bowl, combine flour, sugar and salt, mix it together.
Add Coconut oil, egg and blueberries. Knead the dough into a ball.
Cover the dough in vita wrap and set aside in the refrigerator for 1 hour.
Preheat the oven to 356 Fahrenheit (180 Celsius).
Cut the dough in 8 pieces and roll them into balls, lay them on a baking sheet and press them flat with your hand.
Bake in the oven for 20 minutes.
Let them cool on a rack.
